Our recent post on Fernet and Coke got me thinking about what other warm weather drinks I could mix up using the lesser used bottles in the back of my liquor cabinet. Since I love the smell and taste of Green Chartreuse, but don’t use it in cocktails much, I thought I would use it as my base. I tried several juices with it and thought that pineapple was a pretty natural companion. Once I found the pairing, the rest came easy because they work so well together.
- 1 oz Green Chartreuse (use Green, not Yellow Chartreuse)
- 4-6oz Pineapple Juice
- 3/4 oz Freshly Squeezed Lime Juice
- Garnish with lime wedge
Fill a highball glass with ice and add Chartreuse. Add the Lime Juice then fill the glass with Pineapple Juice. Stir, throw in the lime wedge and serve. Remember, a highball glass is only 8-12 ounces. If you’re using a larger glass, adjust the ingredients appropriately.
This drink has a very different taste. I recently served this to guests, half loved it and the other half, well, not so much. Give it a try, experiment with quantities and please, as always, report back on what you think.
